Classes are transferable, but not refundable. Class attendance is limited & classes fill fast. If a class is cancelled due to low attendance, it will be rescheduled within the following 6 months and your tuition will be transferred to that date or to another class. Your class payment does not expire. You can also schedule a private class for you and your friends, for special occasions, ladies night out, couples’ night, bridal showers, or just because you love to cook! Special topics and menus are welcome.

Wednesday the 2nd Surviving the holiday potluck and parties without gaining weight

Great easy dishes for dinner or pot luck, appetizer parties and get togethers. Great dishes don’t have to be made with cream to taste fabulous. You will enjoy Chicken picatta, easy gratins and quick hors d’oeuvres such as a wonderful white bean and basil dip with fresh Belgian endive leaves and other tasty lower fat dishes.

Wednesday the 9th Thanksgiving side dishes that steal the show

Admit it, you are getting tired of your aunt Sophie’s green bean and cream of mushroom soup casserole…. Potato and celery root gratin with leeks, Roasted winter squash with mint, pumpkin seeds and a balsamic vinegar glaze, Carrot and parsnip puree with toasted sliced almonds, candied clementines with cranberries, stir fried kale with roasted red peppers. Try something new for the holidays!!

Wednesday the 30^th Gifts of Food

Gifts of food are always welcome for the holidays, and they are easier on your budget and pocketbook. Come learn to make marinated Feta with olives, lemon and fresh thyme, a superb hot Chai mix, flavored vinegars and olive oils, spice blends and a terrific hot chocolate blend. This is a really fun class that will give you new ideas, as well as packaging tips for your homemade creations.

Wednesday the 7th Sushi and hand roll workshop - hand's on!

If you knew sushi, like I know sushi…..

Come try your hand at preparing all the ingredients for making your own sushi, learning how to make perfect rice and learning how to “rock and roll” with your sushi mat. If you have your own sushi mat, please bring it to class. We will learn how to make rolls, nigiri sushi, properly slice fish, and how to serve sashimi. Vegetarians welcome – we have lots of non-fish options. This class is a great Christmas present for the sushi lovers on your list.

Wednesday the 11^th Jump start the new year and the new you with a Fast track detox diet

If you’ve wanted your system to get rid of nasty toxins, and jump-start a weight-loss program, this class is for you…. Based on the book “The Fast Track Detox Diet” by Ann Louise Gittleman, this class will give you the necessary basics and information you will need to get started and enjoy lots of terrific food. We will also include some raw foods recipes (courtesy of Leigh Fortson”.) This class includes a copy of Ann’s book “The fast track one day detox diet”, as well as a two week meal plan and recipes.

Wednesday the 18^th The many flavors of Thailand

Let the many flavors of Thai cuisine dance on your palate! Kaffir lime leaves, Fish sauce, palm sugar, fresh ginger and lime, will combine in wonderful fragrant ways, in this introduction to Thai cuisine. Some of the dishes we will cook will be a Panaeng shrimp curry and a sliced grilled beef salad, as well as a fragrant coconut lemongrass soup and other delights.

Wednesday the 25^th A taste of Southern India

Indian cuisine is based on variety, which in flavors, encompasses hot and sour, hot and nutty, sweet and hot, bitter and hot, bitter and sour and sweet and salty. The Indian genius lies not only in squeezing several flavors out of the same spice by roasting it, grinding it or popping it whole into hot oil, but in combining seasonings such as ground roasted cumin seeds with mint, ginger and garlic with green chilies, to create a vast spectrum of tastes. It is this total mastery over seasonings that makes Indian food quite unique.

We will be cooking dishes such as Shrimp and coconut with curry leaves, Green beans with coconut and popped mustard seeds and Red lentil dhal with shallots, from the Kerala region of India, as well as an array of raitas and rice pilaf.

Willow Pond is centrally located to just about everything. There are so many things to do, many of them for very little or no money, or you can just relax and hang out at the inn.

Day 1 Check in, wander the grounds or sit by the pond, relax with some hot or iced tea... Dine at any of downtown Grand Junction's many fine restaurants, see our dining guide for our favorite places. After dinner walk it off on Main Street and take the Art on the Corner walking tour of over 100 sculptures. Cost $0- excluding dinner.

Day 2 Pick up a picnic lunch at Main Street Bagels on Main Street and then tour by car ($7/ car) or if you are an experienced cyclist, bike the Colorado National Monument ($4/bike), which is only 4 miles up the road. Biking Guide Stop at the Dinosaur Museum in Fruita ($4-7 per person).

Day 3 Golf Redland's Mesa ($63+) or take a yoga class ($14 drop-in) at the Academy of Yoga in the morning and in the afternoon tour the Palisade wineries by limo ($80+ per hour).... Winery Tour Guide If you are here June-Sept, make a stop at some of the orchards for fresh peaches and other fruit delicacies! Or hit up the Thursday Farmer's Market in the afternoon (free). In winter, drive up to Powderhorn for a day of skiing ($46+)

Day 4 Mountain biking in Fruita (free), swimming at one of the local lakes (Park entrance fees), river rafting and horseback riding along the Colorado River ($150+), view the Wild Mustangs at the Little Bookcliff Mountains (free).

Day 5 Daytrip to Moab and Arches National Park ($5-10). Eat at Miguel's in Moab. Or stay closer to home and take a picnic lunch and hike to the Mica Mine at Bang's Canyon (free).

Day 6 Dinosaur digs, get out there and dig up the real thing ($125+)! One-three day excursions available. Or do the scenic byway drive of the Colorado Grand Mesa (best in fall for the color change) (free).

Day 7 Tour one or more of these Museums: Western Colorado Botanical Gardens ($0-5), The Art Center ($3), Museum of the West ($3-5), Cross Orchards Historical Farm ($2.50-$4), Math and Science Museum ($3), Gateway Auto Museum for you car buffs ($0-9 per person)...or race on the Grand Junction Motorspeedway ($40+).

Colorado Wine Country

Many of our guests enjoy the wine tours here in the Grand Valley. There are about two dozen wineries starting in the Fruita area, Grand Junction, Palisade and on down to Whitewater. Each offers something unique. This is a self-guided tour, most of the wineries are located in the town of Palisade. There are limo tours available by the hour, through "A Touch With Class Limo" http://www.colorado-limo.com/

Most of the wineries are open 10-5 Daily, call for specific hours, many have Winter hours/days.

During the Summer, if you come on a Thursday you can begin around noon, take your tour and end the day at the Grand Junction Farmer's Market on downtown Main Street.

The town of Palisade offers a Saturday morning Farmer's Market, you can stock your picnic basket in the A.M. and begin your tour there...The rest of the week, you'll want to stop at the Slice o' Life Bakery to get your bread and dessert and stop by one of the many Palisade fruit stands to pick up a few fresh fillings for your picnic basket...if you're here in August, you've gotta get a fresh peach pie!

Dave and I like dessert wines, so our favorites are swayed by our preference for sweet. Most of the fruit wines made in the Grand Valley are just that, wines made from fruit, not grape wines with fruit essences, they are flavorful and delicious.

This quaint tasting room is out in the middle of the orchards in Palisade, off the beaten path. There is a nice shaded grass area to sit and enjoy. The highlight of your trip to Carlson will be the wineglass dipped in chocolate and filled with cherry wine. My two other favorites from this winery are the Fat Cat Muscat (heavenly) and the Reisling. Carlson also has great peach, pear, apricot and traditional wines. They often have some great deals on cases.

This family owned vineyard makes all of their own wine from start to finish. When you drive up to the shop, you drive through the vineyards, it has a real old world feel about it. At the foot of Mt. Garfield, it's a beautiful spot to stop. This winery offers daily tours of the winemaking process, including bottling, sealing and storing in their underground cellar. Call for tour hours. They have a tasting room/giftshop and offer many food gifts including wine themed jams and sauces. You can even join their wine club and have their wines shipped to your home.

Biking in the Grand Valley

The Grand Valley is a cyclist's paradise, with an abundance of sunshine and spectacular views of the Colorado National Monument, Mount Garfield, the Colorado Grand Mesa and the Little Bookcliff Mountains. In April, May and Early June you can take advantage of the mild weather and desert wildflower blooms. In the Fall, the weather is near perfect and the fall color change in the Grand Valley is in full swing.

Willow Pond Bed & Breakfast offers locked storage for bikes and a washing/clean-up area.

Bike Rentals can be arranged thru Willow Pond and bikes delivered directly to the inn. You can also have your bike shipped to the inn for your trip...

Mountain Biking:

Willow Pond is only 12 miles from Fruita. The town of Fruita offers world class mountain bike trails http://www.gofruita.org/biking.html . Kokopeli's Trail, with 142 miles of trails sprawling from Loma, Colorado to Moab Utah, this trail loop offers a self-teaching trail to expert level trails, there really is a trail for everyone! Fruita is also home to the April Fruita Fat Tire Festival.

Willow Pond is only 1.5 hrs from Moab http://www.discovermoab.com/biking.htm and 2 hrs from Arches http://www.nps.gov/arch/. Lodging is limited in Moab, their B&B's fill up very quickly, so you might consider staying here in Grand Junction and making a day trip to Moab for biking, hiking and rafting or daytripping to Arches... Another reason to stay in Junction is that we are about 10-15 degrees cooler than Moab, so you can escape the heat! We suggest April-May and September-October for the mildest weather...

Road Biking:

You are in for a treat! Willow Pond is only 4 miles from the East entrance of the Colorado National Monument, which offers 33 miles of paved road on Rimrock Road, with a climb of 2300 vertical feet! The Grand Valley offers paved river front trails running from Palisade to Fruita, nearly 20 miles of paved trails along the Colorado River. We are also only 2.5 miles from downtown where you can enjoy fine dining, shopping and the Art on the Corner Sculpture Series on Main Street, Grand Junction.

Leah Lyon!

A perennial artist, I recently went to college to create my first professional career. I graduated with a B.A. in Public Relations from Mesa State College, CO. It’s creative side assists me in my pottery business.

What happened is while going through school I discovered a love for clay. (Those darn electives!) It started with hand building and transition into throwing on a wheel. I often use both techniques in my pieces. I have finally accepted that clay is now a passion.

Clay is addictive. Don’t let anyone tell you anything different. Whether you collect the finished vessels or indulge in the creation process you’ll get hooked. My husband tells me the reason I love clay is because of my love of rocks. Clay is simply very, very small rocks. He may be right. Scientifically it’s true!

My love of creating ceramic vessels uses my natural abilities and learned skills. It is the happy
accidents that amaze me. Like my “Peach Pitchers”

The story goes - I had thrown my first tall (for me) vase. When I went to flip it over to dry more, one side collapsed. I was in shock. I couldn’t waste the vessel so...I altered it more and “voila!” My own style of pitcher.
I create functional pieces that are a joy to look at. I seek to create vessels with texture and functional aesthetic forms. So that when they’re not in use you would think, “Why would you want to put this away in a cupboard?!

"Nigro is an excellent guitarist, drawing a multitude of tone colors from his instrument and displaying great technical dexterity. He has a wide dynamic range, a very pretty sound, and an ability to vary his articulation for expressive purposes. All of these tasks Nigro performed with ease and a sense of style."

Lisa Schroeder and Michael Nigro join their musical talents, creating an experience of pure elegance and classical artistry. Their vision is to reach a non-classical audience, inspire the classical listener, and to touch just one life with a "noteworthy" performance. Their interest in South American Music can be heard throughout their extensive flute and guitar repertoire. Lisa and Michael are both on faculty at Vanguard University of Southern California.

During the course of the concert, in an informal manner, Michael and Lisa often include commentary, information, and anecdotes about the composers and pieces they are performing. Their striking ability to communicate with their audience makes "Noteworthy" performances seem more like an intimate gathering of friends than a recital for strangers.

Flutist, Lisa Schroeder is a Los Angeles based performer, teacher, and clinician. As a Solo Artist with Altus Flutes, and as flutist with Noteworthy Duo, Lisa has established herself as a first-rate artist and teacher, performing in Concerts and giving Master Classes across the United States and Europe. In California, she is the acting principal flutist of the Golden State Pops Orchestra. In August 2008, Lisa was selected to perform bass flute with the National Flute Association’s Professional Flute Choir at the Kansas City Convention. Her expressive playing transports the audience into the music and has received praise from the flute community. Gary Schocker, a renowned flutist/composer/pianist, states “Lisa Schroeder is a dynamic performer who brings her own style to the flute.”

As a high school junior, she attended the esteemed Interlochen Center for the Arts and knew from that moment on that she was destined to be a flute performer. Lisa began her collegiate music studies at Eastern Michigan University and later relocated to Nashville, Tennessee where she received her Bachelor of Music degree in flute performance from Middle Tennessee State University.

While in Nashville, Lisa gained experience in performing, teaching, and recording session work with area singer/songwriters. She held the piccolo position in the Tennessee Philharmonic and the flute position with the Music City Winds.

In 2002, Lisa performed in the John Barcellona Master Class in Kentucky, after which the internationally acclaimed flute performer/teacher invited her to study with him in Southern California. She in turn received her Master of Music degree in flute performance from California State University Long Beach. Her interest in new music inspired a thesis entitled, “Twentieth-Century Techniques in Flute Literature: Learning and Teaching Multiphonics”.

Lisa Schroeder has performed in Master Classes with Gary Schocker, Peter Lloyd, Michel Debost, Debora Harris, Angeleita Floyd, John Barcellona, Jim Walker and Sir James Galway. Her primary teachers have included Dr. John Barcellona, Dr. Yvonne Chavez-Hansbrough, Dr. Deanna Hahn-Little, Dr. Julie Stone, and Ann Richards of the Nashville Symphony.

Mrs. Schroeder currently teaches flute at Vanguard University of Southern California, Cerritos College, Golden West College, and directs the Rolling Hills Flute Choir. Her passion for teaching has brought about her annual “Flute Loops” camp held in Palos Verdes, CA.

Michael Anthony Nigro showed an interest in the guitar at an early age and began playing by the age of 12. After several years of lessons with local teachers and self-study, he attended the prestigious Indiana University School of Music where he graduated with his Bachelor of Music Degree in 2000 under the direction of Ernesto Bitetti.

After moving back to his native Southern California, he attended California State University, Fullerton and earned a Master of Music degree under the tutelage of David Grimes.

Michael Nigro’s debut recording, “Homage to Piazzolla; Argentine Dances, Songs, and Rhythms,” is released on the label, Music & Arts. The American Record Guide stated, “Nigro has a big sound, a smooth tone, and sure-footed interpretive instincts.” His latest CD, “Guitar Sudamericana,” is released on the Austrian label, Balcon Records and features guitar works by Heitor Villa-Lobos, Antonio Lauro, Adolfo Luna, Jose Luis Merlin, and many others.

As a performer and teacher, Michael has played concerts and Master Classes at many esteemed colleges which include Bates College in Lewiston, Maine, University of Wisconsin, Glendale Community College in Glendale, Arizona, Marist College in Poughkeepsie, New York, Marlyhurst College in Portland, Oregon, William Jessup University in Rocklin, California and many others.

Michael is an active member of the guitar community; he is co-founder of the Long Beach Classical Guitar Society, independent reviewer of new music publications for Soundboard Magazine, and sought after teacher and performer.

In January 2006, Michael joined the faculty at Vanguard University of Southern California where he teaches private guitar, class guitar, and guitar ensemble.

Pete Kartsounes is no stranger to the life of a full time musician.
He has spent the past 13 years writing, recording and touring nationally and internationally.
Now living in Boulder, Colorado, Pete has established himself as a dominant figure in todays music scene.

Apart from playing festivals and venues nationwide as a member of the Wayword Sons "featuring Benny Galloway"
(writer behind the songs of Yonder Mountain String Band), Pete also plays as a solo act, and with his own band "Pete Kartsounes Band" (P.K.B).
The band consists of an amazing group of musicians, who's skill set has the ability to fit the genre of any event.
Pete's mixture of musical genres is extensive, making his music unique.
He writes ballads, blues, jazzy, bluegrass, standard-like and sometimes music that isn't so easy to describe
other than to say that they are "story-telling" songs. He is also known for his strong, soulful voice, and encompassing lyrics.
Referred to as a "must see" and "truely one of a kind" from critics, he is becoming one of the most prolific songwriters of today.

Pete's newest release "Out of Nowhere" is his 3rd and most essential albumn to date.
Getting rave reviews throughout the country, it is a tasteful blend of Bluegrass, Jazz, folk, and blues,
entwined with acoustic overtones and superb musicianship.
The disc includes many well known artists, some of which are Grammy Award Winner Sally Van Meter, Jeff Austin (Yonder Mtn String Band),
Drew Emmitt (Leftover Salmon), and Travis Book (The Infamous Stringdusters).
It was also recorded in DSD (Direct Stream Digital) format by Gus Skinas. It is truely original and visual music.

Rabbit Valley- Trail through Time

30 miles from Grand Junction, near the Colorado/Utah border, is Rabbit Valley and the Trail Through Time. Here you can view some interesting wildlife, such as the lizard pictured above, as well as interesting vegetation, rock formations and of course, what the area is famous for....dinosaurs! Well, dinosaur fossils anyway...

This area also has a working quarry, where folks from the Museum of Western Colorado excavate findings to be displayed at the Dinosaur Museum, in Fruita. Some days you might find the paleontologists out there digging...

Spring and Fall are the best times to go, mild weather and flowers in the springtime. Summer is hot, triple digits, so bring plenty of water!

There is a high trail and a lower trail with wheelchair access. The entire loop is 1.5 miles, and takes an hour to an hour and a half to complete. The high trail was easy enough for us hiking novices to complete...

$40 a day the Willow Pond way

Hey! We know you all still want to get away, and times are tough, so we thought we'd give you some ideas for splurging on a getaway at Willow Pond while still getting to enjoy the absolute best the Grand Valley has to offer on as little $$ as possible, about $40 a day, per person. These are our suggestions for enjoying favorite local restaurants and activities that reflect our region at it's finest!!!

This is a low cost version of our "Things to do" page...

Remember, breakfast is complimentary, not to mention we serve complimentary afternoon goodies...So you only need $ for lunch (if you want it) and dinner, plus activities... All of the restaurants listed have some vegetarian options available.

Day 1 - $20 for two!
You will just be checking in and most likely will just want to head straight to dinner! Luckily, a McAlister's Deli just opened within walking distance of the inn, .65 miles away! Walk off dinner while you enjoy the countryside on your way back to the inn. Most of their menu items are in the $5-7 range, so two can eat for about $20 bucks including a beverage! Try one of their giant Spuds and their famous iced tea...

Day 2 -about $30 per person

Enjoy the Willow Pond grounds, sit by the pond, curl up with that book you've been putting off, watch a DVD, relax with some hot or iced tea... Play croquet on the lawn or enjoy some board games. Have lunch at Spoons (about a mile and a half from the inn) you'll enjoy a great lunch and support the local Hospice program at the same time! Don't miss the French dip sandwich, served with chips, order a miniature cheesecake and a drink, all for about $10...

If you are here on the first Sunday of the month, you can tour the Western Colorado Botanical Gardens, for FREE!!! $5 adults, $3 Seniors.

For dinner, drive or bike (it's only 2.5 miles to Main Street) to Pablo's Pizza, a Grand Valley favorite. Try the "La Chupacabra"pizza, about $27 with drinks. Walk off dinner on Main Street and take the Art on the Corner walking tour of over 100 sculptures. Walk to Enstrom's Candy and get a Toffee Lover's ice cream cone, yum!!! About $3 per person.

Day 3 about $38 per person, less for bikers and seniors!

Tour the Colorado National Monument, take a picnic lunch, park entrance fee by car ($7/ car) or if you are an experienced cyclist, $4/bike, the east entrance is only 4 miles up the road. Biking Guide You can spend all day up at the Monument, hiking and biking.
Stop at the Dinosaur Museum in Fruita ($4-7 per person).
Do a quick free wine tasting at the Two River's winery on your way back to town.
Lastly, stop at Main Street Bagels, for a handmade challah bread sandwich with waldorf chicken salad, bring it back to the inn and enjoy it on the deck...our fresh baked afternoon goodies will be waiting!

Day 4 about $28-$47 per person.

In the morning, visit the Grand Junction Art Center, if you are here on a Tuesday, it's free! Otherwise $3.
Zen Garden for lunch, your choice of Japanese, Chinese or Thai, plus a great sushi bar! Don't be fooled by the mix, it's all good! Most lunches around $6...
Continue on to tour the Palisade wineries, for free wine tastings... Winery Tour Guide
There are a number of great local wines in the $10-15 range, make sure to pick some up on your tour!
On your way back, enjoy rooftop dining at Bin 707. Carpaccio $10 with a Caesar Salad $5, Cheeseburger and fries $17... Roasted Organic Chicken $19. They grow their own veggies on site, used to be Pantuso's.
Bring that wine back to the inn, sip by the pond and watch the dragon flies.

Day 5 about $25-40 per person
PLAN A
In the morning, the Museum of the West ($5)
In the afternoon, lunch at the Palisade Cafe, get the burger and fries with the homemade bread from the slice o'life bakery. Stop at the Blue Pig Art Gallery in Palisade.
If you are here June-Sept, make a stop at some of the orchards for fresh peaches and other fruit delicacies, especially the pies! Prices vary.
Bike around the Palisade orchards and wineries or rent a tube and tube down the river ($15/day, $80 deposit)
Or in the afternoon, hit up the Thursday Farmer's Market in the afternoon (free) June-Sept.
For dinner, have a Navajo Taco and try all the free samples at the market, from kettle corn to peaches, yum!

OR PLAN B about $40
Drive the scenic loop from here to Paonia to Glenwood Canyon and back. Eat lunch at the Flying Fork Cafe, most meals around $10 with beverage, try their famous Gazpacho! Then go up to Glenwood Canyon for a dip in the hot springs. ($18) and dinner at the Glenwood Canyon Brewpub. (Their lunch menu is available for dinner, save $) This is an incredible drive in the Fall, with the color change, it is an all day trip, so plan accordingly.

Day 6
PLAN A about $30 per person
In the morning go out to Cameo and view the Wild Mustangs. (free)
Lunch at Fiesta Guadalajara in Fruita to fuel up for your afternoon mountain biking.
Mountain biking in Fruita (free), have dinner at the Hot Tomato. Free thursday night concert series in Fruita at the park.

PLAN B
Enjoy a "drop-in" yoga class at The Academy of Yoga ($14) Then it's lunch at Nepal Restaurant, Indian and Nepalese food, on Main St. Lunch buffet and chai tea for about $10! Then afternoon mountain biking in Fruita (free) and dinner at Hot Tomato...

Day 7

PLAN A about $47 per person, if you don't let your window shopping turn into real shopping.
After breakfast, take a hike to the Mica Mine at Bang's Canyon (free). It's only a 40 minute hike, each way, on a well-maintained trail that leads to a fairy land known as the Mica Mine, best in Spring with wild flowers, red rock canyon and a run off stream to dip your feet. Nice in Fall too.
A quick soak in the jet-tub, freshen up and head out to lunch at 626 on Rood, fish tacos and a flight of Spanish Wine will set you back $17. You're all ready for an afternoon of window shopping and gallery hopping on Main Street.
Dinner is your final splurge at Le Rouge, whatever you do, make sure you get our favorite chocolate mousse! Dinner & dessert $24+ per person

PLAN B: about $47 per person
Mica Mine in the morning, picnic lunch,
afternoon swimming at one of the local lakes $6 State Park entrance fee.
Splurge on dinner at Le Rouge $24+

Kitchen Sink Yard Sale and Vinyl Blowout

As part of the local Community Radio station's fundraising efforts, KAFM Community Radio will hold a day-long sale. This is the second annual yard sale for the non-profit organization. Last year's sale raised over $2000 to help support Junction's only local community radio station. Part of the yard sale will include thousands of vinyl records of every genre. This record sale is also a yearly event and is always much anticipated by collectors, who come from far and wide to scoop up treasures. "We will have thousands of vinyl albums for sale starting at $1 each! with volume discounts! The more you buy, the more you save!" said the station's Operations Manager, Tracy Baker. "This sale is really a day-long party and gathering of the community. It's always great fun and it supplements our other fundraising efforts."
